These healthy, protein packed Oat Pancakes are an absolute winner in our home, and once you try them, you’ll see why !

Makes approx. 8-10 hand sized thin pancakes

1 cup whole grain oats blitzed

2 tablespoons ground almonds or almond flour

2 tablespoons fresh grated or coconut powder (for baking)

1 tablespoon ground flaxseed

1 teaspoon chia seeds

1 medium egg

1 teaspoon cinnamon powder

2 mashed overripe banana

1/2 cup unsweetened plant-based milk of choice – (I used Almond Milk)

1. Mash banana into a mixing bowl with a fork

2. Add the egg and mix well

3. Add all dry ingredients into a food processor and blitz until fine

4. Add to the bowl and mix well

5. Add in the plant based milk

Mix everything well and Fry using a non stick frying pan for 2-3 mins each side in coconut oil.

Top with some coconut and your favorite fruits! Add a little organic maple syrup for that added sweetness!
