Easy Beef and Veggie Lasagna

Serves 6


2 tbsp olive oil
500g grass fed beef mince
1/2 small zucchini, sliced thin
2 mushrooms, sliced thin
One small red onion, diced small
2 cloves of garlic, minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon oregano
Cracked black pepper
1 cup of passata
1 tablespoon of raw honey
2 cups of ricotta cheese
1/4 cup water
3 tablespoons of mozzarella cheese
3 tablespoons of cheddar cheese
6 Lasagna sheets
3 tablespoons sundried tomatoes, chopped


1. Add olive oil to a large pan over medium heat pan and sauté onions and garlic until soft.
2. Add minced beef, spices salt and pepper and stir. Sauté until brown.
3. Add sundried tomatoes, passata and honey, stir and cover. Simmer on medium heat for approximately 15 minutes.
4. Meanwhile, slice your zucchini and mushrooms.
5. In a medium pan over high heat, add ricotta cheese
6. Add 1/4 cup of water and stir on medium heat until it becomes like a sauce approximately 2 to 3 minutes. Set aside.
7. When meat sauce has thickened you can start to assemble your lasagna.
8. Start by layering your lasagna sheets, and your vegetables, the ricotta, the meat and cheese. And layer one more time.
9. Cover and cook at 180° for approximately 35 minutes. Take off the cover and broil for a further five minutes.
10. Serve hot!
