Easy Banana and cinnamon muffins (no refined sugar)

Makes 12-14 muffins

Wet Ingredients

3 ripe bananas mashed
2 tbsp of low-fat Greek yogurt
1/3 cup maple syrup
2 medium eggs at room temperature
1/3 cup of coconut oil (melted)

Dry Ingredients

1 1/2 cups organic whole wheat self raising flour
1 tsp baking powder
½ tsp baking soda
½ tsp of pink salt
1 tsp of cinnamon

Directions

Preheat oven to 180°C

Add preferred Oil to the slots of a large muffin tin for 12 pieces and set aside.

In a large mixing bowl Mash, the bananas and add eggs and maple syrup then whisk well.

Next add the coconut oil and Greek yogurt and mix to combine everything.

In another bowl, combine all your dry ingredients and mix together, making sure there are no lumps of flour or cinnamon.

Fold dry ingredients into the wet, slowly combining everything with a spatula.

Add 2 tablespoons of the mixture to each muffin slot and cook for approximately 25 minutes until muffins are cooked in the center.

Delicious! Light! Fluffy and refined sugar free! Kids will LOVE them xx
