
This recipe is a low carb, protein packed post workout meal that will set you up for the entire morning! Its a winner when entertaining guests, you could also make these vegan by adding our Crispy Tofu instead of the eggs!
The Tahini sauce adds a depth and such a unique flavor with a mix of Mexican and The Middle East we are sure that you’ll be trying something a little different to the norm!
Beware that they are super loaded so prepare to get messy!

Serves 4-6
Makes 8-10 Tacos
2 tacos per person
For the Salsa
1 tablespoon Extra Virgin Olive Oil
½ red onion, peeled and finely chopped
½ red pepper, deseeded and finely diced
1 clove of garlic, peeled and crushed
2 beef tomatoes chopped
½ tsp smoked paprika
1 can or jar of black beans (approx. 240g when drained)
80ml water
Pinch of salt and Pepper
For the sauce
2 tablespoons soy cream
2 tablespoons tahini
3 tablespoons fresh lemon juice
1 clove of garlic, peeled and crushed
Others
1 tablespoon Extra Virgin Olive oil
6 eggs
8 small corn or coconut tortillas (Dairy Free)
Small bunch of coriander, roughly chopped
1 Avocado – Sliced lengthways
Directions:
1. For the salsa, add half of the oil to a hot frying pan. Add the onion, pepper and garlic and saute until soft.
2. Add the tomatoes, drained beans and smoked paprika, and water bring to a simmer then cook for 5-8mins until thickened and reduced. Season with a pinch of salt and Pepper and set aside.
3. To make the sauce – Add all the ingredients into a Maison jar (any glass jar with a lid) and shake well. Leave to develop in the fridge.
4. Meanwhile, heat the remaining oil in a separate frying pan over a medium-high heat.
5. Crack the eggs into a bowl and whisk adding a pinch of salt and pepper, add to the pan and scramble until cooked through.
6. Heat the tortillas as per the instructions on the packet.
7. Spoon the tomato and bean sauce over the tortillas and then add the eggs. Add a couple of slices of avocado per taco.
8. Top with coriander and a drizzle of Tahini sauce (dried chili flakes optional) then serve.
